Pepperoni Pasta Salad
16 ounces bow tie pasta, cooked al dente to
...package directions, drained
12 ounces marinated artichoke hearts, drained and sliced
7 ounces roasted red peppers, drained and sliced
2 1/2 ounces ripe olives, drained and sliced
2 Tablespoons capers
4 ounces Provolone cheese, diced
18 ounces meatless spaghetti sauce with herbs
1/3 cup Olive oil
3 Tablespoons red wine vinegar
1 teaspoon dried basil or 2 Tablespoons freshly chopped
2 sticks Pepperoni sausage, thinly sliced
Combine all ingredients in a large bowl. Toss to coat well.
Serve chilled.
Makes 6 servings.
