Rice Salad

List of Ingredients
4 c. cooked rice, slightly gummy, cooled
2 jars chopped marinated artichoke hearts, drained, reserve liquid
1 large can sliced black olives, drained, reserve liquid
3 chopped red, green or yellow peppers
1/2 chopped green onion
1 8oz. bottle vinaigrette salad dressing
salt and pepper to taste
Recipe
Mix all ingredients together.
Season with salt and pepper.
Place in a large serving bowl.
Cover and chill well.
Garnish and serve.
Makes 10 - 12 servings.
If the salad seems dry, use the saved liquids to moisten.
May add 1 c. chopped ham or turkey, if desired.
