Tortellini Salad w/creamy vinaigrette dressing
for salad:
3/4 pound fresh tortellini
1/2 pound fresh green beans
1/2 pound cherry tomatoes
2 Tablespoons freshly grated Parmesan cheese
for dressing:
1/4 cup rice wine vinegar
3 Tablespoons fresh lemon juice
2 Tablespoons plain yogurt
1/4 teaspoon dry mustard
1/2 teaspoon garlic powder
1 teaspoon granulated white sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 Tablespoons Olive oil
1/2 cup vegetable oil
handful of fresh herbs, chopped (basil, parsley, chives)
Cook tortellini to package directions.
Drain and let cool.
Cook green beans. Cut into smaller pieces and let cool.
Cut tomatoes in 1/2 unless very small.
When all ingredients are cool, combine with dressing.
In blender combine all dressing ingredients; blend well.
Chill and serve.
