Vegetable Salad #1, some cooking
2 to 3 sliced, cooked tender, cooled carrots
1/2 pound fresh, cooked tender, cooled green beans
3 stalks of celery sliced
1 peeled and sliced cucumber
6 large sliced radishes, or 12 small
1 pint cherry tomatoes
1/2 cup black olives
1/4 cup oil (preferablyl)
2 tablespoons red wine vinegar
2 - 3 tablespoons chopped onion
1 minced garlic clove
1/2 teaspoon ground paprika
1/4 teaspoon salt
1/4 teasoon ground black pepper
Put all vegetables in a medium/large bowl.
Stir together oil, vinegar, garlic, paprika, salt and pepper.
Pour over vegetables and stir to serve.
Makes 8 servings.
