Wilted Lettuce Salad
2 heads leaf lettuce, washed and torn into pieces
1 bunch green onions, chopped
6 slices bacon
1/4 c. cider vinegar
1/4 c. water
Clean and rip up lettuce into larger serving bowl.
Add onions to bowl with lettuce.
Fry bacon until crisp in frying pan and drain on paper towels.
Crumble bacon when cool.
Add vinegar and water to bacon fat in frying pan and
bring to boil. Pour boiling bacon grease and vinegar
mixture over salad greens, stirring constantly while
lettuce wilts. Mix well.
Garnish with bacon pieces before serving.
Makes 3 servings.
