Grilled Shrimp Sandwich

Grilled Shrimp Sandwich
for one sandwich:
2 slices bread
cream cheese
Cheddar, Colby or whatever other cheese you prefer
frozen cooked shrimp, medium size, with tails off, thawed
butter flavored cooking spray
While shrimp is thawing in a bowl of hot water, spread cream
cheese (the secret ingredient) on one slice of the bread.
On the other, slice enough of the cheddar to cover the bread.
Place 8 or 9 medium thawed shrimp on top of the cheddar,
then put the cream cheese bread on top.
Spray top of sandwich with butter flavored cooking spray and
place sprayed side down in warm skillet. Let toast a couple
of minutes.
Spray new top, then flip it for another couple of minutes.
Serve hot.
If you use a panini or sandwich toaster, spray both sides before
using it and toast for a couple of minutes. Toast lightly - just
enough to get the cheese to begin melting.
