Ham, Pineapple + Asparagus Wrap
12 crepes (pre-packaged)
1 1/2 pounds lean ham
18 asparagus spears
2 1/4 cups crushed pineapple
1 1/2 cups of shredded Colby and Monterey Jack cheese
Preheat oven to 350 F. Cut asparagus spears in half and steam until tender.
Heat crepes per directions on package (30 seconds to 1 minute). Place 2
ounces of lean ham on the crepe. Put 3 of the steamed asparagus stalks on
top of the ham.
Top with 2 tablespoons of crushed pineapple. Make sure to squeeze out all
the juice. Top with 2 tablespoons of the cheese. Roll. Spray baking dish
with nonstick spray. Place rolled crepes in the dish. Bake until the cheese
has melted, approximately 3-5 minutes
