Pork Sandwiches, (pull apart)
for dry rub:
3 Tbsp Paprika
1 Tbsp Garlic Powder
1 Tbsp Brown Sugar
1 Tbsp Dry Mustard
3 Tbsp coarse salt
1 (5-7 lb) Pork Roast (Boston Butt or Shoulder Roast)
Rub spice all over and allow to marinate at least one
hour or overnight. Bake up to 6 hours. (The thick part
of the meat registers 170 degrees).
Sauce:
1 1/2 C. cider vinegar
1 C. mustard
1/2 C. ketchup
1/3 C. brown sugar
2 garlic cloves, smashed
1 tsp. salt
1 tsp. cayenne
1/2 tsp. pepper
Combine and simmer for 10 minutes.
Let meat rest 10 minutes. Then pull apart with a fork.
Pour 1/2 of the sauce over meat to coat. Toss.
Use the remainder of the sauce when serving the
sandwiches. Serve each sandwich with 2 pickle slices.
Tip:
Spread butter over one side of the bun and toast in a
hot pan or under the broiler. This help crisp the bread
so that the sauce does not completely soak it, plus it
is yummy!
