Portabella Mozzarella Sandwiches, grille

originator's comments: I first tried a similar sandwich at a restaurant called Panera Bread,
but I fine tuned it into a delicious treat that my wife enjoy whenever
Portabellas are on sale.
List of Ingredients
Portabella Mozzarella Sandwiches, grilled
4 large portabella mushroom caps, or
...3 packages of sliced portabella mushrooms
4 slices mozzarella cheese
garlic flavored cooking spray
1 large yellow onion sliced into rings
4 Tbsp butter
4 Kaiser rolls, split
Salt
Mayonnaise
Heat grill to medium. Cut mushrooms into 1/2 inch slices if using whole
caps. Spray all surfaces of mushrooms with spray. Place on grill.
Cook for 10 to 15 minutes, turning once or twice.
While mushrooms are grilling, place onion and butter in a large skillet
over medium heat. Salt to taste. Cook until the onion rings start to
caramelize.
Using the butter in the skillet (push onions to one side), coat the cut
surfaces of the rolls. I usually just place the bun in the skillet and
lightly press it into the butter. Place buttered side of rolls onto
grill for light toasting.
Cook the mushrooms until they are soft and about 1/2 their original size.
Remove rolls and mushrooms from grill.
Lightly spread mayonnaise on the rolls. On the bottom piece of the roll,
layer the mushrooms, cheese, and onion. Top with other half of roll and
enjoy!!!Recipe
