Turkey + Veggies in Pita
1 pound thawed ground turkey
1/2 cup chopped green peppers
1/2 cup chopped onion
20 ounce package frozen broccoli, carrots, and cauliflower
5 ounce canned potatoes
2 pita breads (8 inch rounds, cut in half)
for sauce:
1/2 cup water
1/4 cup soy sauce
4 teaspoon cornstarch
1/4 teaspoon ground ginger
Combine sauce ingredients and stir until cornstarch is dissolved.
Brown turkey in skillet, add peppers and onion and saute until onions are transparent.
Add frozen vegetables and cook till tender.
Add the sauce and potatoes to the skillet mixture and heat until potatoes are hot.
Cut 2 pita breads in half, toast lightly and stuff with meat mixture to serve.
Makes 4 servings.
