Cheese Sauce
2 Tbsp. butter
2 Tbsp. flour
1/2 tsp. salt
1 c. milk
1 c. shredded cheese, (mild or sharp, American, Cheddar, Swiss, etc.)
1/8 tsp. white pepper
Melt the butter over a low heat.
Stir in the flour and salt until the mixture is smooth.
Slowly add the milk and cook over a medium heat, stirring constantly, until the mixture thickens and comes to a boil.
Add the cheese and stir to melt.
