Parsley Sauce

A delicate sauce, especially good on white fish.
List of Ingredients
2 tbsp. butter
1 tbsp. flour
1 1/4 c. milk or a mixture of milk and fish stock
1/4 tsp. dried parsley
salt and pepper to taste
Recipe
Melt the butter in a pan, but do not allow it to brown.
Add the flour and stir until smooth.
Cook over a low heat for 2 - 3 minutes stirring constantly.
Remove from heat and add the milk, a little at a time, stirring after each addition to prevent any lumps forming.
Bring the sauce to the boil, stirring continuously.
Add the parsley, salt and pepper and cook gently for another 3 minutes.
Makes 4 servings.
