Three Pepper Sauce

Recipe Introduction
Here is a quick, easy, and healthy sauce that appeals to the eye as
well as the palate. And please don't turn up your nose at the
anchovies. They disappear in the sauce and leave behind only a faint,
unidentifiable deliciousness.
List of Ingredients
Three Pepper Sauce
1/4 cup (60 ml) olive oil
1 red onion, thinly sliced
2 each red, green, and yellow bell peppers (capsicums),
cored, seeded, and cut into thin strips
4 anchovy fillets, rinsed and finely chopped
1-3 cloves garlic, finely chopped
1/4 cup (60 ml) chopped fresh parsley
Salt and freshly ground pepper to taste
Heat the oil in a large skillet over moderate heat and saute the onion
until tender and lightly browned, about 10 minutes. Add the peppers
and saute 5 minutes. Add the anchovies and garlic and saute 5
minutes. Remove from the heat and stir in the parsley, salt, and
pepper. Serve over fettuccine, spaghetti, or other long, narrow
noodles. Serves 4 to 6.Recipe
