I've made this quite a few times already and it always goes over great. The first time I layered it, then since, I have been mixing it all together and cooking it in my crockpot. Everyone that ate it, has really liked it and there was very little left. I did think it could use a
bit more of the milk mixture. So the next time I made it, I doubled the liquid mixture.
Macaroni + Cheese, layered*
1/2 pound elbow macaroni, cooked al dente, drained
2 cups shredded Cheddar Cheese, (I prefer Monterey Jack)
2 cups shredded Mozzarella Cheese
2 eggs
1 1/2 cups milk
3/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon paprika
Preheat the oven to 350 degrees F.
Coat a 2 quart baking dish with cooking spray.
Mix the cheeses together and set aside.
Layer 1/3 of the macaroni in bottom of the baking dish.
Sprinkle with 1 1/2 cups of the cheese.
Repeat.
Top with the remaining last 1/3 of the macaroni.
Set aside the remaining 1 cup cheese.
In a medium bowl, whisk together the eggs, milk, salt,
and pepper until blended. Pour over the macaroni.
Cover and bake for 45 minutes, or until heated through.
Uncover and sprinkle with the remaining cheese and paprika.
Cover and let stand for 10 minutes before serving.
Makes 4 - 6 servings.
