    1 3/4 c. dried brown beans
    5 c. water
    1 1/2 tsp. salt
    1/3 c. white vinegar
    1/2 c. dark corn syrup
    2 tbsp. packed brown sugar

    Recipe



    Wash and pick through the beans.
    Pour into a large saucepan and add the water.
    Let soak overnight.
    Set saucepan over a high heat and bring the water to boiling quickly.
    Reduce heat and cook over a low heat about 1 hour.
    Add the remaining ingredients and continue to cook over a very low heat for another hour, or until the mixture thickens and the beans are tender.
    If it doesn't thicken enough to suit your taste, remove the cover, turn up heat and stir while cooking for 5 - 10 minutes more.
    If the beans thicken too much add 1/4 - 1/2 c. water.
    Makes 4 servings.
