Apple Juice Vegetable Soup
1/2 pound pound carrots, cut in 1/2 inch pieces
1/3 pound cauliflower florets, separated
1/3 pound broccoli florets, separated
3/4 of a large onions, sliced thin
5 ounces dried mushrooms
1/4 pound green beans, cut in 2 1/2 inch pieces
2 cups water
3/4 teaspoon garlic powder
1/2 of a 16 ounce jars meatless spaghetti sauce
1 cup elbow macaroni
1 cup apple juice
Place vegetables, water and garlic powder in an 8 quart pot.
Cover and bring to boil over medium/high heat.
Boil 12 minutes, stir once.
Reduce heat to low and cover.
Simmer 60 to 70 minutes until vegetables are tender.
Stir in rest of ingredients.
Bring to a boil. Reduce heat and simmer about 15 minutes.
Serve right away or store in the refridgerator overnight,
covered.
Makes about 7/8 servings.
May be frozen.
