    Apple Soup #2

    List of Ingredients

    Apple Soup #2

    16 chopped apples
    5 c. water
    1/2 tbsp. grated lemon peel
    1 inch piece of cinnamon, wrapped in cheesecloth
    1/4 c. maple syrup
    1 tbsp. arrowroot
    1 tbsp. lemon juice
    1/4 c. white wine
    1/2 c. sour cream, optional

    In a large pot, simmer the apples, water, lemon peel, cinnamon,
    and maple syrup until the apples are tender, about 20 minutes.
    Remove the piece of cinnamon.
    Puree soup in a blender/food processor.
    Return to sauce pan.
    Remove about a cup of liquid and combine it with the arrowroot.
    When thickened, return to soup.
    Stir in the lemon juice, and wine and heat through.
    Makes 6 servings.
    Serve with a spoonful of sour cream on each bowl, if desired.
