3 cups red and green apples, cored, peeled
and diced
1/2 cup vegan granulated sweetener *
2 teaspoons lemon zest
3 cups hot water
1/2 cup white wine or 1/4 cup unsweetened
apple juice
2 Tablespoons flour
2 Tablespoons cold water
1/2 cup soy cream or soy sour cream (See Note
at end of recipe)
Combine apples, sweetener, zest, and hot water in a
medium pot. Cover and cook on medium heat until
apples are tender, about 30 minutes. Add the wine or
juice and continue to cook.
In a small cup, combine flour and cold water to make
a smooth paste. Add several spoonfuls of hot soup to
paste to temper it (making it easier to incorporate into
soup). Add paste to soup, stirring vigorously to combine.
Simmer for 5 minutes. Remove from heat, cover and
place in refrigerator to cool for at least 2 hours. Stir
in cream before serving. Makes 5 - 6 servings.
