B L T Soup
1/4 pound bacon, chopped
3 Tablespoons butter
2 cups onion, chopped
2 garlic cloves, minced
3 Tablespoons flour
4 cups chicken stock
2 large heads Boston lettuce, trimmed,shredded
1 bay leaf
1 cup light cream or milk
salt and pepper
1 medium tomato, diced
Using a large saucepan, on medium heat, cook bacon until crisp
( about 5 minutes) Remove bacon from pan and drain on paper
towels. Pour off fat in pan.
In same saucepan, melt butter over medium heat. Add the onions
and garlic and cook, stirring frequently, until soft but not browned,
3 to 5 minutes.
Add flour and cook, stirring constantly, 1 to 2 minutes without
allowing to color. Stir in chicken stock and lettuce. Add bay leaf.
Bring to a boil. Reduce heat to medium low, cover, and cook 15 min.
Remove from heat and discard bay leaf.
Puree soup in batches, using a food processor or blender, until
smooth. Return to pan and stir in cream. Season with salt and
pepper to taste. Cook over medium heat, stirring, until just heated
through, about 3 minutes.
Stir in bacon just before serving and garnish with diced tomatoes
