Beef Goulash Soup
2 slices (rashers) of bacon, diced
1 medium onion, finely chopped
1 pound stewing beef, cubed
4 ribs celery, chopped
2 medium carrots, diced
1 medium parsnip, diced
3/4 Tablespoon ground allspice
2 Tablespoons ground paprika
2 cloves garlic, mashed
8 cups beef broth or water
2 Tablespoons tomato paste
4 medium potatoes, cubed
1 teaspoon celery salt
1/2 teaspoon ground black pepper
1 teaspoon crushed caraway seed, optional
2 Tablespoons flour
Fry the bacon in a large pot until well done, but not crisp.
Add the onion and fry slowly until almost golden, stirring occasionally.
Add the cubed beef and fry until browned.
Add the celery, carrot, parsnip, allspice, paprika, and garlic and fry
for several more minutes.
Add the broth and tomato paste (the pot be about 2/3's full).
Bring slowly to a bowl, reduce the heat, and simmer, partially covered,
for about 2 hours or until the meat is tender.
Add the potatoes, salt, pepper, and caraway seeds.
Simmer for 30 minutes or so, until the potatoes are done.
If the soup needs thickening, mix the flour with some cold water in a small
cup, add some of the hot liquid from the soup, then incorporate the
thickener back into the soup, mixing well and letting boil for a couple of
minutes.
Makes 4 servings.
