Broccoli Cheese Soup
2 cups water
5 cups broccoli – chopped
1 cup celery – chopped
1 cup carrots – chopped
1 cup onion – chopped
2 cloves garlic – minced
6 Tbsp butter
6 Tbsp flour
3 cups chicken broth
2 cups half & half
2 Tbsp Parsley (dried)
2 tsp salt
2 tsp ground white pepper
1 pound Velveeta cheese
In medium pan, bring water to a boil. Add broccoli, carrots, and celery
– boil for 2 minutes stirring frequently. Drain and set aside.
In large pan, melt butter then sauté onion and garlic. Whisk in flour
slowly to form a paste. Add broth and half & half. Stir constantly and
bring to a boil. Boil for one minute.
Add parsley, salt, pepper – stir in briefly. Add previously boiled
veggies; cover and reduce heat to low. Simmer for 20-25 minutes
stirring occasionally.
Cut Velveeta into small pieces as you add it to the mixture, stirring
frequently leaving the heat on low. Simmer 5 minutes and serve.
Serves 4 - 6 people.
