Cabbage Roll Soup

Based on classic cabbage roll recipes, but made with
much less effort. Browned ground beef, onion and sliced
cabbage are simmered in tomato soup; sour cream is
stirred into the dish just before serving. Serve with
rice, mashed potatoes or pasta.
Cabbage Roll Soup
1 pound lean ground beef
1 onion, sliced
1 medium head cabbage, sliced
2, 10.75 ounce cans condensed tomato soup, or
...use 1 can of tomato sauce with 1 can soup
salt to taste
ground black pepper to taste
1/2 cup sour cream
In a large pot over medium heat, brown the ground beef
and onion. Stir in cabbage, soup, water, salt and pepper.
Cover and simmer until cabbage is tender; stirring
occasionally. Stir in sour cream just before serving.
Makes 6 servings.
