1/3 pound smoked ham hock
1/2 head of green cabbage, finely shredded
8 cups of water or chicken broth
2 medium potatoes, diced
8 - 10 whole black peppercorns
1/4 teaspoon ground allspice
2 bay leaves
2 medium onions, finely chopped
2 Tablespoons flour
2 Tablespoons butter or lard
1/4 cup sour cream
2 Tablespoons fresh dill, chopped
freshly ground black pepper
Put the smoked meat in a large pot and cover with water
or broth. Bring to boil slowly, reduce heat, cover and
simmer for 1 hour.
Remove the meat and cut into small cubes, about half an
inch per side. Reserve the liquid.
Place the cabbage in the broth. Add water to cover if
needed. Add the whole peppercorns, allspice, and bay
leaves. Add the potatoes.
Bring to a boil. Then simmer, partially covered.
Melt the butter or lard in a frying pan on medium heat.
Add the onion and fry it until almost golden, stirring
occasionally. Add the flour and cook for a few more
minutes, stirring occasionally. Add a little broth to the
flour and onion mixture, bring to a boil and cook for a
couple of minutes. Add to the soup and mix well.
Add the meat. Cook until the potatoes and cabbage are
done, about 15 minutes.
Stir the sour cream into the soup. Mix in the chopped
dill and salt and freshly ground black pepper to taste.
Makes 6 servings.
