Cabbage + Turnip Soup

List of Ingredients
4 slices diced thick bacon
1 head shredded green cabbage
2 sliced onions
4 c. chicken stock or bouillon
1 thinly sliced turnip
2 c. water
2 shredded carrots
6 sprigs parsley bundled with 1 bay leaf
2 cubed raw potatoes
salt and pepper to taste
1/4 c. finely grated fresh Parmesan cheese or goat or feta cheeseRecipe
Combine all the ingredients except the salt, pepper and cheese in a 6 quart saucepan.
Partially cover and simmer for 1 1/2 - 2 hours.
Discard the parsley bundle.
Season to taste with salt and pepper.
Pour into hot soup bowls and garnish with the Parmesan cheese.
