Chicken Corn Chowder w/cheese
1 1/2 - 2 pounds boneless chicken breast, cut in pieces
1 medium onion, chopped
4 stalks celery, chopped
2, 10 3/4 ounce cans cream of chicken soup
1, 16 ounce can whole kernel corn (with liquid)
1 cup milk
Velveeta cheese (med. size brick)
In a large pot combine onion, chicken and 1 cup water.
Boil, then simmer 15-20 minutes (until chicken is cooked).
Add remaining ingredients.
Cook on medium to low heat for 1/2 hour. Keep stirring
and checking so cheese doesn't burn.
This is so good.
