1, 10 ounce can chicken broth
1, 10 ounce can mild rotel, (think this is
...a special made type of tomato?)
1, 10 ounce can stewed tomatoes
1, 10 ounce can whole kernel corn
1, 10 ounce can green beans
1, 5.5 ounce container vegetable juice
4 cups of Water
1 teaspoon ground cumin
2 teaspoons chili powder
1 cup chopped cilantro
2 pounds leftover chicken, shredded
...(I use ready made Rotisserie)
1 small chopped onion
2 Tablespoons Olive oil
salt and ground black pepper to taste
Use 5 quart stockpot.
Place chicken broth, rotel, tomatoes, corn, green
beans, juice, water, cumin, chili powder and cilantro.
Cook on medium for 10-15 minutes.
Meantime using separate pan, saute oniion, garlic
and chicken in oil.
Place in stokpot and let simmer for 30 minutes.
Makes 6 - 8 servings.
Top with:
Tostitos or Torilla Chips and shredded Monterey Jack Cheese
