Corn Chowder #2
1/2 cup butter
1 small diced onion
2 ribs diced celery
1/2 diced red pepper
1/2 diced green pepper
1 minced garlic clove
1/2 cup flour
1 quart chicken stock
1 quart milk
salt and pepper to taste
couple quick drips of hot sauce
2 teaspoons poultry seasoning
2 diced Russet potatoes
2 cups frozen corn
Melt the butter in a saucepan.
Add the onion, celery, peppers, and garlic and saute until onion is translucent.
Sprinkle the flour over the vegetables and continue cooking for one minute, stirring constantly.
Slowly add the stock and the milk, stirring constantly.
Add the salt, pepper, hot sauce, poultry seasoning, corn and potatoes and stir.
Simmer gently for 25 minutes, or until potatoes are done, stirring often.
Adjust salt and pepper to taste.
