Cream of Artichoke Soup
1 1/2 pounds artichokes, washed
2 cups + 1 1/2 cups water
2 tablespoons extra light Olive oil
2 medium chopped onions
1/2 teaspoon ground rosemary
1 tablespoon oatmeal
1 small crushed garlic clove
2 tablespoons soy sauce
salt to taste
Steam the artichokes in 2 cups water until tender,
or approximately 45 minutes.
Set aside liquid left after steaming.
Let artichokes cool.
Scrape flesh from bottom 1/3 of each leaf and place
into saved liquid from steaming articokes.
Remove fuzzy choke from each artichoke bottom and
throw away.
Coarsely dice artichoke bottoms and set aside.
Heat oil in medium saucepan.
Saute onion and rosemary for 5 minutes.
Add diced artichokes and all water.
Bring to a boil.
Cover and simmer 30 minutes.
Add garlic, soy sauce and salt and blend until smooth.
Makes 4 servings.
