Cream of Asparagus Soup
1 tablespoon butter
1 finely chopped small onion
1/2 finely chopped celery stalk
2 cups chicken stock
1 pound chopped asparagus tips
salt and pepper to taste
1/4 teaspoon ground mace
3/4 cup whipping cream
3 chopped hard boiled eggs
Saute the onion and celery in butter, until soft but
not brown.
Add stock and asparagus. Bring to a boil.
Then simmer 5 minutes.
Add salt, pepper, and mace.
Remove from heat and slowly stir in cream.
Reheat to gentle simmer.
Serve garnished with egg for garnish.
Makes 6 servings.
