    Cream of Cheese Soup #1

    Cream of Cheese Soup #1

    3 cups chicken broth or stock
    1 1/2 cups coarsely shredded carrots
    1/2 cup sliced green onion
    2 1/2 cups milk
    4 tablespoons flour
    1 teaspoon dry ground mustard
    1/4 teaspoon pepper
    1, 8 ounce package softened cream cheese
    2 cups shredded Cheddar cheese,
    ...sharpness to your liking


    Combine broth, carrots, and onion in a Dutch oven type
    pan over a medium heat.
    Combine milk, flour, mustard and pepper in a bowl and
    mix well.
    Gradually whisk flour mixture into the broth mixture
    until well blended.
    Continue to heat, stirring occasionaly, until thick and
    bubbly.
    Pour 1 cup of mixture from pan in medium mixing bowl.
    Stir in cream cheese until blended well and cream cheese
    is almost melted.
    Stir back into the pan.
    Stir well and heat through.
    Stir in shredded cheese until melted, just before serving.
    Makes 8 servings.
