    Cream of Tomato Soup #1

    List of Ingredients

    Cream of Tomato Soup #1

    for white sauce:
    6 tablespoons butter
    6 tablespoons flour
    3 1/2 cups milk

    1, 28 ounce can diced tomatoes
    2 - 3 tablespoons sugar
    ground black pepper
    herbs of choice, fresh or dry,
    ...(basil, thyme, tarragon, or dill
    ...work well)
    up to 1 teaspoon dry mustard, optional

    for the sauce:
    Melt butter over medium heat.
    Remove from heat when bubbles.
    Quickly stir in flour until it is a paste.
    Gradually add milk and whisk until smooth.
    Place back on low heat and continue to cook, stirring
    constantly, until thickened.
    In another saucepan, warm tomatoes over a low heat.
    Add the sugar, pepper, herbs and mustard.
    When tomatoes warmed and sauce done, combine and stir
    well to combine.
    Continue to heat until piping hot.

    Note:
    Change the flavor a bit by using 1/2 cup Less milk
    when making the sauce and ad 1/2 cup dry sherry or
    white vermouth or sake just before serving.
