Cucumber Soup #1, cold
1 medium diced onion
1 Tablespoon oil
3 peeled, diced cucumbers
2 1/2 cups chicken broth
1 1/2 Tablespoons lemon juice
1 teaspoon granulated white sugar
1 cup half+half
salt and ground black pepper
Saute onion in hot oil 5 minutes over medium heat.
Add cucumber and cook 5 minutes more.
Add broth, lemon juice, and sugar. Boil.
Reduce heat and cover and cook for 20 minutes.
Cool for a few minutes.
Puree in a blender.
Add half+half, salt and pepper to taste.
Makes 4 servings.
Easily doubled.
