Free Soup - (M a n y Vegetables)
1, 46 ounce container V-8 type juice
1/2 head cabbage, shredded
1, 10 ounce package frozen Brussels sprouts,
...or fresh when available
1 small head cauliflower, cut into bite sized chunks
1 pound broccoli (or more!) cut into bite sized chunks
1, 10 ounce can diced tomatoes
(any variety, like with chilies..Italian spices, etc)
1 cup celery, diced
2 onions, chopped
1, 14 1/2 ounce can green beans
2 cups frozen peas
2 bell peppers, chopped, or equivalent
...of dehydrated red/green peppers
4 carrots thinly sliced, or 1 14 1/2 ounce can sliced
4 – 6 cloves garlic – diced or pressed
2 Tablespoons dried parsley
2 Tablespoons dried oregano
1 – 2 packages dry onion soup mix -- to your taste
2 Tablespoons to 1/4 cup balsamic vinegar
2 teaspoons Worchester sauce
1 small can mushrooms, optional
1 – 2 beef bouillon cubes
1, 14 1/2 ounce can sliced potatoes, optional
2 bay leaves (remove after soup is finished)
salt and pepper to taste
You need a so HUGE soup pot for this entire recipe (cut
down as needed)
Throw everything in the pot and cover with water.
Bring to boil, stirring occasionally, and then simmer 40 –
60 minutes or until vegetables reach desired tenderness.
Adjust seasonings, as needed.
Serve with crusty bread…enjoy!
You can leave out anything you don't care for and it is
still excellent.
