    List of Ingredients




    2 pounds fresh spinach, stems removed/rinsed well
    8 cups chicken stock or reduced sodium canned broth
    1 chopped garlic clove
    1 small chopped onion
    3 tablespoons cornmeal
    1 tablespoon flour
    1 teaspoon salt
    1/2 teaspoon pepper
    1/4 teaspoon grated nutmeg

    Recipe



    Combine 1 cup stock, garlic, and onion together in a large
    saucepan and bring to boil over high heat.
    Add spinach. Stir and cook for 2 minutes.
    Add remaining chicken stock.
    Bring to a boil.
    Combine cornmeal and flour in a small bowl.
    Gradually whisk into pot.
    Cover and simmer for 30 minutes.
    Pour into blender/food processor and blend together.
    (Do in batches if necessary.)
    Stir in the salt, pepper, and nutmeg and serve.
    Makes 6 - 8 servings.
