Ham + Bean Soup

List of Ingredients
1 lb. dried Great Northern beans, rinsed, drained and picked over
2 lbs. smoked ham hocks, or scraps and pieces from leftover ham
1 lg. chopped onion
1 minced garlic clove
1 lg. potato, cut into cubes
2 ribs finely chopped celery
1 lg. shredded carrot
2 tsp. dried parsley

Place the beans and 2 1/2 quarts of water in a large soup pot.
Remove any beans that float to the surface.
Bring to a boil. Cover and continue to boil for 2 minutes.
Remove from the heat and allow the pot to set, covered, for 1 hour.
Add the ham, onion, and garlic. Cover.
Bring to a boil, then reduce heat and simmer for 2 hours.
Add the potatoes, celery, carrot and parsley. Cover.
Continue to simmer for at least 1 hour or longer.
Remove meat and separate meat from fat and bones, if necessary.
Dice up the meat and return to the soup.
Season to taste with the pepper.
Makes 6 hearty servings.
