Italian Tomato Soup

List of Ingredients
4 tbsp. extra virgin olive oil
6 large ripe tomatoes, peeled, seeded, and chopped
(it is important to use fresh tomatoes in this recipe)
2 - 4 finely chopped cloves garlic
1 thinly sliced onion
3/4 tsp. dried parsley or 2 tbsp. chopped fresh
6 c. water
salt and pepper to taste
1 c. orzo, or other small pasta
freshly grated Parmesan or Romano cheese Recipe
Heat the oil in a large pot over a moderate heat.
Saute the tomatoes, garlic, onion, and the parsley for 10 minutes.
Add the water, salt, and pepper and bring to a boil.
Lower the heat and simmer, uncovered, for 20 minutes.
Add the pasta and simmer until al dente.
Sprinkle with the grated cheese(s).
Makes 4 - 6 servings.
