Kielbasa Vegetable Stew
1 medium red onion, cut into thin wedges
1, 14.5 ounce can diced tomatoes, undrained
2 cups red potatoes, cut into chunks
2 medium carrots, cut
1/2 pound fully cooked kielbasa, Polish sausage,
...cut into slices
1/4 teaspoon marjoram
1/8 teaspoon pepper
2 cups finely chopped cabbage or coleslaw mix
Coat a 12 inch skillet with cooking spray and heat over
medium heat. Cook onion in skillet 2-3 min, stirring occasionally,
until crisp-tender. Stir in tomatoes, potatoes, carrots, sausage,
marjoram and peper. Heat to boiling; reduce heat to medium/low.
Cover and cook 10 minutes. Stir in cabbage. Cover and cook
5-10 minutes, stirring occasionally, until vegetables are tender.
Note:
This may also be made in a crockpot/slow cooker on Low
for 6-8 hours. The result is softer vegetables.
