Kielbasa + Lima Bean Soup

Recipe Introduction
This hearty soup is really a one-dish meal, so
serve it with a salad and some crusty bread for
an easy crowd pleaser.
List of Ingredients
Kielbasa + Lima Bean Soup
1 pound dried lima beans, (450 g)
...picked over and rinsed
1 pound kielbasa or smoked sausage, (450 g)
...cut into 1/4 inch slices (5 mm)
2 carrots, cut into 1/4 inch slices (5 mm)
2 ribs celery, cut into 1/4 inch slices (5 mm)
1 large chopped onion
2 - 4 finely chopped garlic cloves
6 cups water (1.5 L)
Salt and freshly ground pepper to taste
1, 15 ounce can diced tomatoes with liquid (425 g)
Cook in a tightly covered baking dish in a 300
degree F. (150C) oven.
Stir in the tomatoes. Cover and cook for 15 minutes.
Serves 8 to 12.
OR use your crockpot/slow cooker.
Combine all ingredients except the tomatoes in a
crockpot/slow cooker. Cover and cook on high for
10 to 12 hours, OR until the beans are tender.
Add tomatoes, cover and cook another 30 minutes.Recipe
