Liver Stew
1 pound of calves beef liver, diced
2 onions, chopped
2 ounces butter
1/2 pound of mushrooms, chopped
Salt and pepper, dash of ground thyme
2 cups beef broth
2 tablespoons flour
Thyme
1 cup of heavy cream
Parsley
Fry chopped onions in hot butter. Add the liver and saute
for about 3 minutes. Pour in the chopped mushrooms.
Add flour, salt, pepper and a little ground thyme to taste.
Stir constantly while adding hot beef broth. Boil until well
done. Cool and add cream. Sprinkle with parsley.Recipe
