    This is a quick and easy recipe using homemade frozen cooked meatballs, or store bought. Just remove the amount needed for the recipe, and then keep the remainder in the freezer.

    List of Ingredients




    3 minced garlic cloves
    1 tablespoon Olive oil
    3, 15 ounce cans cannellini beans, drained and divided
    1, 32 ounce container chicken broth
    1 package of Knorr Vegetable Soup Mix
    60 to 64 frozen small cooked meatballs
    1, 14 1/2 ounce can diced tomatoes,
    ...with basil, garlic and oregano
    1/2 teaspoon dried crushed red pepper
    8 ounces uncooked rotini pasta
    1/2 of a 10 ounce package frozen chopped spinach,
    ...thawed and squeezed dry
    ...(or use a 10 ounce bag freshly torn spinach)
    Parmesan cheese

    Recipe



    Saute garlic in hot oil in a stockpot over medium/high
    heat 1 minute.
    Stir in 2 cans beans and chicken broth. Bring to a boil.
    Stir in vegetable soup mix until dissolved.
    Add meatballs, tomatoes, and red pepper.
    Bring to boil again.
    Add rotini, and cook 15 minutes, stirring often.
    Stir in remaining beans and spinach.
    Cook 5 more minutes.
    Garnish with Parmesan cheese.
    Makes about 4 quarts.

    Serve with breadsticks.
