Meatball Soup #2, scratch
1 pound lean ground beef
1/2 c. bread crumbs
1 egg
1 tbsp. finely chopped + 1 small diced onion, separated
1/4 tsp. parsley
1/2 tsp. garlic powder
1/4 tsp. oregano
salt and pepper to taste
canned milk
2 - 3 diced carrots
2 - 3 stalks diced celery
1/2 16oz. bag frozen peas
2 small diced potatoes
1 16oz. can stewed tomatoes
1 16oz. can corn, drained
Mix the beef, bread crumbs, egg, the tbsp. onion, parsley, garlic, oregano, salt and pepper together in a bowl.
Add just enough canned milk to make the meat hold together.
Roll into medium sized balls and set aside.
Place the carrots, celery, the diced onion, peas and potatoes in a small stockpot.
Add enough water to cover.
Bring to a boil and cook until the carrots are tender, adding more water if necessary.
Add the meatballs, stewed tomatoes and corn.
Cover and simmer until the meatballs are no longer pink in the center.
