Just a wonderful soup, and such a pretty color.
Pepper Soup, red/creamy
4 tablespoons olive oil
1 medium onion, chopped
5 red peppers, seeded and chopped
2 medium potatoes, diced
1 clove garlic, minced
5 cups chicken broth
1 cup evaporated milk
Chopped green onion and sour cream
for garnish
Heat oil, then add onion, and cook until transparent.
Add red peppers; cook until soft.
Add potatoes, garlic, and chicken broth.
Cook for 1 hour, then put in blender and mix.
Add milk. S
erve with chopped onion and a dot of sour cream.
Makes 8 servings.
