Pork + Vegetable Stew
1 pound well trimmed boneless pork shoulder,
...cut in 3/4 inch cubes
1, 14 1/2 ounce can diced tomatoes with roasted garlic
1, 14 1/2 ounce can chicken broth
3/4 pound red skin potatoes,
...cut into 1 inch chunks (2 1/3 cups)
1 large yellow summer squash, diced
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1, 14 1/2 ounc can cut green beans, or baby carrots
Coat a 4 to 6 quart saucepan that has a lid,
with cooking spray.
Add pork and saute for 5 minutes or until browned.
Add remaining ingredients and bring to a boil.
Reduce heat, cover and simmer, stirring a few
times, for 40 to 45 minutes, or until the meat is
tender.
Makes 4 servings.
