Potato Swiss Cheese Soup
2, 32 ounce containers chicken broth
2 pounds thinly sliced potatoes
1 thinly sliced yellow onion
1 quart heavy cream
1 cup shredded Swiss cheese
1/2 cup grated Parmesan cheese
1/4 cup real bacon bits
2 Tablespoons diced green onions, (scallion type)
Pour chicken broth into a pot, and add potatoes and onions.
Cook on medium heat for about 20 minutes or until potatoes
are tender. Add the remaining ingredients and simmer for
approximately 20 minutes.
Makes 8 servings.
