    Rice + Celery Soup

    List of Ingredients

    Rice + Celery Soup

    2 cups diced celery
    2 cups water
    1/4 cup + 2 tablespoons butter
    1/2 finely chopped medium onion
    1 cup raw rice
    2 - 4 cups chicken, beef, or vegetable stock
    salt and ground pepper to taste
    freshly grated Parmesan cheese for garnish
    freshly chopped parsley for garnish

    Combine the celery, water, and 1/4 c. of the butter in a stockpot
    over a medium heat and bring to a boil. Cover, simmer 15 minutes.
    Remove from the heat and set aside, without draining. Heat the
    remaining 2 tbsp. of the butter in a large pot over a medium heat.
    Saute the onion until is tender but not brown. Transfer the celery
    to the pot containing the onion; and saute for 2 - 3 minutes. Stir in
    the rice and cook for 2 minutes, stirring frequently. Add the stock.
    Simmer. Adjust and pepper and continue to simmer uncovered for
    15 - 20 minutes, until the rice is tender but still firm. Serve with
    Parmesan and chopped parsley. Makes 4 - 6 servings.
