    Simple garlic soups are eaten all over the Mediterranean.
    For best results, use a rich homemade stock

    List of Ingredients




    4 tbsp. extra virgin olive oil
    8 - 12 cloves peeled garlic
    1 tbsp. paprika
    1 tsp. ground cumin
    4 - 6 thick slices French or Italian bread
    4 - 6 c. chicken, beef, or vegetable stock
    salt and ground pepper to taste
    chopped fresh parsley for garnish

    Recipe



    Heat the oil in a wide, deep saucepan over a moderate heat.
    Saute the garlic until it is golden brown, stirring occasionally.
    Stir in the paprika and cumin and cook for 1 minute.
    Remove the garlic cloves and set aside.
    Add the bread slices to the pan and brown on both sides. Remove the bread and set aside.
    Add the stock and bring to a simmer.
    Chop the garlic and add to the stock in the pan.
    Add the salt and pepper to make seasoning adjustment.
    Place a piece of the fried bread in each serving bowl and ladle the soup over it.
    Garnish with chopped parsley and serve immediately.
    Makes 4 - 6 servings.
