Seafood Chowder #2, creamy
1 Tbsp butter
3 Slices rindless bacon, chopped
1 onion, sliced
1 clove garlic, crushed
2 potatoes, peeled and cubed
3 Tbsps plain flour
2 cups milk
2 cups water
1 pound smoked cod, skinned, sliced (500g)
1/2 pound Crab Meat (250g)
10 ounce can creamed corn (310g)
1 Tbsp lemon juice
Salt and ground black pepper
Melt butter in a saucepan. Saute bacon, onion and garlic until onion
is tender. Add potatoes. Cook 1 minute.
Blend flour with a little milk to form a smooth paste. Blend into pan
with remaining milk and water. Bring to the boil, stirring constantly,
until mixture thickens.
Reduce heat. Simmer for 15 minutes or until potatoes are tender. Stir in
all remaining ingredients. Simmer for a further 5 minutes.
Serve with crusty bread. Serves 4 to 6.
