    Spinach Noodle Soup

    Spinach Noodle Soup

    3 tbsp. butter
    1 chopped onion
    1 grated carrot
    2 diced potatoes, optional
    1/4 c. raw long grain white or brown rice
    2 quarts water*
    8 chicken bouillon cubes*
    1 10oz. box frozen chopped spinach,
    thawed and squeezed dry
    1/2 c. uncooked spiral noodles
    salt, if needed
    pepper to taste

    Melt butter in a large saucepan. Saute onions and carrot.
    Pour into stockpot.
    Add potatoes, rice, water and bouillon cubes and simmer 20 minutes.
    Add the spinach and noodles and simmer 10 - 15 minutes.
    Sprinkle with salt and pepper.
    Makes 6 servings.
    *Or 2 qrts. chicken broth or stock.
