    Spinach + Rice Soup

    2 med. yellow onions, peeled & chopped
    2 tbsp. butter or margarine
    4 (13 3/4 oz.) cans chicken broth
    1/2 cup uncooked rice
    2 (10 oz.) pkgs. frozen chopped spinach,
    ...thawed and squeezed dry
    2 tsp. salt
    1/4 tsp. nutmeg
    1/8 tsp. pepper

    Stir-fry onions in butter in large sauce pan over moderate heat 8-10 minutes
    until golden brown.
    Add broth and bring to a boil.
    Stir in rice and boil, uncovered, 10 minutes until rice is about half done.
    Add remaining ingredients and simmer 12-15 minutes longer, until rice is
    done.
    Ladle into bowls and serve with garlic bread and sliced tomatoes, for a
    refreshing light lunch.
