    Split Pea + Ham Soup

    List of Ingredients

    Split Pea Soup

    8 cups water
    1 pound dried split peas, (about 2 1/4 cups)
    ...picked over
    1, 2 pound smoked ham, or from leftover
    1 medium chopped onion
    1 teaspoon salt
    1/2 teaspoon ground black pepper
    2 - 3 chopped or sliced carrots
    2 - 3 chopped or sliced celery stalks (ribs)

    Bring water and peas to boiling.
    Boil for 2 minutes, then remove from heat and cover.
    Let sit for 1 hour.
    Add whole slices/chunks ham*, onion, salt and pepper.
    Cover and simmer until peas are tender, about 1 hour.

    *If using whole bone in ham, remove from soup. Trim
    meat from bone and cut into 1/2 inch pieces.
    Stir back into soup.
    Add carrots, and celery and stir.
    Cover and simmer until vegetables are tender, about 45
    minutes, or to your liking.
